Belated Father's Day
With our wind-blown hair wisps, his milk beard, our matching forehead wrinkles, and our ridiculous good looks... we've decided we're pretty much the most attractive due in the nation.
I joke, I joke. How was your Father's Day? My family jumped in the car and drove for hours in search of sunshine. We didn't stop until we found it. Determination at it's finest! Did you do anything with your pops?

Banana Cranberry Oat Muffins
Need to find a way to use those ripe bananas?
Search no longer! Behold, a recipe that will make you swoon.
Gluten and dairy free, might I add!
If Jesus had a favorite muffin, this would be it. I'm serious.
It's wholesome, pure, fulfilling, and all things good in life.

Banana Cranberry Oat Muffins
3 Cup oats
2-3 ripe bananas, mashed
1 Cup almond milk
1 Cup cranberries
2 eggs
1 Tbs baking soda
1 Tbs Cinnamon
1 Tbs vanilla extract
1) Preheat oven to 375 degrees fahrenheit
2) Mix together all ingredients in one large bowl (you do not need a hand mixer, a stirring utensil will do just fine).
3) Grease muffin pans, proceed to fill with the gorgeous batter you just created.
4) Place in oven for approximately 20 minutes.
5) Enjoy! Eat it plain, or spread a little jam.

Does anyone know why...

These are from two separate cameras, yet the film has relatively the same habit.

Gluten, wheat, dairy free.
Once upon a short while ago, I tried going gluten-free.
My attempts lasted one whole week.
I'm trying it all over again, this time excluding wheat and dairy as well.
So long comfort foods, I need to find some new friends.
Friends that are compromised of ingredients that won't leave me feeling queasy.
Long story short? I'll be getting tested for food allergies soon.

Smoked Paprika Cauliflower
My attempts at becoming domestic? Moving right along, if I do say so myself!
Here's to hoping I'll become a good cook in no time!
Recipe taken from here.
You will need:
- 1 Cauliflower head.
- 1 Tbs Olive oil (I recommend using less)
- 1-2 tsp Smoked paprika
- Salt
Preheat oven to 400 degrees F.
Cut up cauliflower head into four quarters, and proceed to cut smaller sizes.
After rinsing and draining cauliflower florets, spread onto baking sheet.
Drizzle with olive oil, season with paprika, followed by the salt.
Set aside smaller pieces in separate bowl, you will use these soon.
Place in oven, set timer for 10 minutes.
After 10 minutes pass, come back, mix up cauliflower, and toss in the bowl (onto baking sheet) that was previously set aside.
Set timer for another 10-15 minutes.
When finished, dish up, and enjoy!
